About the Role:

  • Ensures that all dishes are prepared consistently and according to standard

  • Assigns responsibilities to team members and to supervise performance, coaching and training where necessary

  • Responsible for checking all incoming food items, making sure they are stored in the correct manner as per hygiene regulations

  • To ensure that all mise-en-place for the assigned section is maintained at an appropriate level

  • To ensure that all food safety and hygiene practices are in place

  • Plans or participates in planning menus and utilisation of food surpluses and leftovers, taking into account probable number of guests, market conditions, popularity of various dishes and frequency of menu.

  • To develop and maintain recipes which allow the outlets to operate food and labour costs within the established budget.

  • To Monitor quality of dishes at all stages of preparation and presentation

  • To discuss food preparation issues with Managers, Dietitians and kitchen and waiting staff

  • To demonstrate techniques and advising on cooking procedures

  • To implement all hygiene regulations as well as procedure explaining and enforcing hygiene regulations

  • To identify training needs and plan training programs for the employees

  • Salary range : 73K – 78K

Qualifications:

To be considered for this role the candidate should possess the following:

  • Minimum 2 years work experience as relevant Chef positions in a hotel or restaurant with good standards

  • Certificate III/IV in Commercial Cookery or higher qualifications including a Diploma in Hospitality Management

  • Good Hygiene Knowledge

  • Effective trainer, experienced in the delivery of skills training

  • Safe and accurate knife skills

  • Knowledge and experience in a variety of different cooking methods
